Ingredients
4 medium-large tomatoes, chopped into bite-sized pieces
3 tablespoons olive oil
3 tablespoons red wine vinegar
1 red bell pepper, diced
1 cucumber, diced
1 batch of prepared, baked falafel (about 15 small patties), torn into large pieces
¼ cup chopped basil
Instructions
- In a large mixing bowl, toss together the tomatoes, olive oil, vinegar, bell pepper, and cucumber and toss until well combined.
- Just before serving, add the falafel and basil, toss well, then divide into 4 portions.
