Ingredients

6 hard-cooked eggs, peeled

¼ cup Yogurt-Herb Dressing or dip of your choice

2 tablespoons minced green onion

¼ teaspoon black pepper

¼ cup finely chopped red, yellow, and green bell peppers

6 mini whole wheat pitas

1 tomato, sliced into 6 wedges

Instructions
  1. Place eggs, dressing or dip, green onion, and black pepper in the food processor. Pulse until finely chopped.
  2. Spoon into a serving bowl and top with bell peppers.
  3. Serve on pitas with a slice of tomato.
