Ingredients

1 tablespoon extra-virgin olive oil

3 garlic cloves, minced

1 onion, diced

1 large bunch collard greens, rinsed and chopped

Juice from 1 lemon

Salt

Pepper

Instructions
  1. In a large pan, sauté the oil, garlic, and onion for 2 minutes over medium heat.
  2. Add the collard greens to the pan, along with the lemon juice. Season with salt and pepper to taste, and stir the greens over medium-high heat until they are wilted, about 4 minutes.

I give this palate pleasing favorite 5 stars! this recipe is great for many reasons: Limited cook time retain nutritional properties Minus smoked meat equals Low sodium content Faster cook time Exploration of ingredients ie: mustard, lemon juice

It was really good! The only suggestion I would make is that I instead used half an onion, cause it was a lot compared to the ratio of 1 bunch of collard greens. Other than that I loved it!

I made these at an Old ways class at my local grocery store and I loved it then. I came across the book and made them tonight, delicious quick and easy.
